Ed's Vegan Blueberry Pancakes

 

 

1 Cup Spelt Grain

 

1 Cup Toasted Buckwheat  (Grind into flour or use already ground spelt and buckwheat)

 

3 tsp Baking Soda

 

2 tsp Arrow Root Powder

 

1 tsp Sea Salt

 

1 Bag (8 oz) of Cascadian Frozen Blueberries

 

2 Cups Almond Milk or any other dairy substitute

 

 

Directions:

 

Mix the dry ingredients.

 

Add 2 cups of Almond milk or dairy substitute and the bag of frozen blueberries (do not thaw.)

 

Gently mix only enough to blend the ingredients. 

Use a 1/4 measuring cup to pour them onto the griddle to cook.
